As the sugar liquefies and draws near this temperature, it breaks down into composites with the caramel characteristics and flavor. Caramel can have a variety of textures ranging from soft and chewy to hard. It can also range in a variety of flavors as well.
The union of chocolate and caramel is probably one of the greatest food combinations ever created. The gooey caramel combined with rich chocolate results in a melt-in-your-mouth unforgettable experience.
